The collaborative research project titled "A Preparation Method for High-Acyl Transparent Gellan Gum and Its Application in the Food Industry"—commissioned by CAG Hydrocolloids (hereinafter referred to as "CAG") and undertaken by Nanchang Institute of Technology—has been successfully completed. All research tasks have been fulfilled, and the project has passed the final acceptance review.
Initiated on Dec 1st, 2024, and concluded on Dec 04th, 2025, the project spanned one year. Through close collaboration and dedicated efforts from both project teams, the research has achieved substantial outcomes, fully meeting and even surpassing the expected objectives.

Key Achievements and Success Highlights of the Project:

Successful Development of Novel Material Preparation Technology:
The project successfully overcame the technical bottleneck of achieving high transparency in traditional high-acyl gellan gum, establishing a complete and efficient industrial preparation process. Through key innovative technologies such as dilution for viscosity reduction, high-temperature centrifugal clarification, and composite enzymatic purification, a significant breakthrough was made by replacing traditional filtration methods with centrifugal techniques.

Internationally Leading Product Performance Indicators:

The prepared "High-Acyl Transparent Gellan Gum" exhibits outstanding core performance indicators. Its 1.5wt% solution demonstrates a light transmittance of ≥85%, a gel strength of 1500 g/cm² at 1.0wt% concentration, and a gel yield stress of 500 Pa. All indicators significantly outperform those of traditional high-acyl gellan gum, with overall performance reaching an internationally advanced level.

Significant Achievements in Application Validation:

The new material has been successfully validated in multiple high-end application fields. In the food industry, it has been effectively used to produce transparent candies with high clarity and a pleasantly chewy texture. In the daily chemical industry, it has been applied in products such as transparent air fresheners that provide sustained fragrance release, demonstrating excellent results and confirming its broad market potential.

Establishment of Comprehensive Intellectual Property:

One national invention patent application has been filed based on the project outcomes. A complete proprietary technical solution covering R&D to production has been developed, laying a solid foundation for subsequent industrialization.

The successful completion of this project stands as a model of deepening industry-academia-research collaboration and synergistic innovation between CAG and Nanchang Institute of Technology. It has not only led to the development of a high-performance biological colloid material that fills a market gap but has also opened up broader prospects for future cooperation between the two parties in fields such as food science and biomaterials.
