
pH Determination of Low-Acyl Gellan Gum

Stirring speed: 800 r/min
Measurement temperature: 25°C (room temperature)
3. Experimental Procedure
a. Measure 100g (accurate to 0.01g) of distilled water into a 250mL beaker.
b. Precisely weigh 0.5g of sample (accurate to 0.001g) using a clean, dry weighing paper, and slowly and evenly add the weighed sample into the beaker.
c. Place the beaker on the magnetic stirrer and stir for 1 hour.
d. Measure the pH value using a pH meter.
