
How to test the gel strength of High Acyl gellan gum ?
APPARATUS
Thermo-tank ( 5 ~ 50℃)
Electronic balance (accurate to 0.001g)
TA-TX2 texture analyzer
Water bath ( 10 ~100℃)
PROCEDURE
1. Weigh 3.00g of sample into a 500ml beaker, shake well, then add 2.0ml of 0.3mol/L calcium ion stock solution, shake well, and finally pour 290ml of distilled water into the beaker;
2. Mix with an electric mixer for 10 minutes;
3. Place the sample in a hot water bath at 94-95℃ and heat for 30 minutes until the HA gellan gum is completely dissolved;
4. Weigh the sample and use 95℃ hot water to replenish the lost water so that the weight of the solution is 300g;
5. Pour the glue solution into the prepared container;
6. Then use the TA-TX2 texture analyzer to measure the gel strength.
7. Make three samples parallelly, determine their gel strength and take the average value.
