How to select hydrocolloids based on cost and supply feasibility?

After meeting the target functionality, product system and process conditions, and final product requirements, we can make commercial trade-offs based on cost to select the appropriate hydrocolloids.

Usage Cost:

Compare the dosage required to achieve the same effect and the unit price. For example:

• Gellan gum requires a very low dosage (below 0.1%) but has a high unit price.

• Guar gum requires a higher dosage but has a lower unit price.

Supply Stability:

Ensure the selected hydrocolloid has a stable and reliable supply chain.
