What is the thermodynamic difference in dissolution between clarified and unclarified low-acyl gellan gum?

The primary differentiator lies in the presence of cellular debris and the degree of polymer filtration. Clarified low-acyl gellan gum undergoes strict filtration to remove structural proteins and cell wall remnants of Sphingomonas elodea. Thermodynamically, clarified gellan gum allows water molecules to interact more easily with the polymer chain, lowering the activation energy required for full chain dispersion. It can fully hydrate and dissolve cleanly at 80°C - 85°C under proper ionic conditions. Unclarified grades require prolonged heating near boiling points (95°C - 100°C) and result in light-scattering turbidity due to insoluble protein fragments.
