What is the optimal cooling rate and setting temperature for Low Acyl (LA) vs. High Acyl (HA) Gellan Gum?

The setting temperature depends heavily on the acyl content and the type/concentration of cations present in the formula:

• Low Acyl (LA) Gellan Gum: Typically sets quickly at 30°C - 45°C (86°F - 113°F). Because it forms a hard, brittle gel instantly upon reaching the setting point, the cooling rate must be controlled; rapid, uneven cooling can cause structural fractures in the gel.

• High Acyl (HA) Gellan Gum: Sets at a higher temperature, usually around 65°C - 70°C (149°F - 158°F). It forms a soft gel that is thermoreversible, meaning the cooling rate is less critical to the final texture compared to LA.
