How does ambient humidity affect Pectin powder storage, and what is its standard shelf life?

Pectin is highly hygroscopic; if exposed to a relative humidity (RH) above 65%, the powder will rapidly absorb moisture from the air, causing severe clumping and accelerated chain degradation.

To achieve its maximum shelf life of 24 months, Pectin must be stored in its original multi-layer kraft paper bags with polyethylene inner liners in a climate-controlled warehouse (< 25C or 77F and < 60% RH). Once a bag is opened, it must be tightly resealed immediately. If caking occurs, the powder will be difficult to disperse evenly, creating "fish-eyes" (undissolved lumps) during the hydration stage.
