Clarified low-acyl gellan gum undergoes strict filtration to remove structural proteins and cell wall remnants of Sphingomonas elodea. Thermodynamically, clarified gellan gum allows water molecules to interact more easily with the polymer chain, lowering the activation energy required for full chain dispersion. It can fully hydrate and dissolve cleanly at 80°C - 85°C under proper ionic conditions. Unclarified grades require prolonged heating near boiling points (95°C - 100°C) and result in light-scattering turbidity due to insoluble protein fragments.
