What is the optimal dispersion and dissolution protocol for carrageenan to prevent fish-eyes and incomplete hydration?

 Carrageenan powder is highly hydrophilic and tends to clump ("fish-eyes") if exposed to water without proper dispersion. To ensure complete hydration, the carrageenan must first be dry-blended with other soluble recipe ingredients (such as sugar or starch) at a ratio of at least 1:10, or pre-dispersed in oil or alcohol. The dispersion should be added to cold water under high-shear agitation. For full dissolution and activation of the polymer chains, the system must then be heated to its specific dissolution temperature—typically at least 80°C to 85°C—and held for 10–15 minutes before cooling to initiate uniform gelation.
