The primary difference lies in their native molecular structure, processing requirements, and final purity levels. Gelidium-sourced agar naturally features a high-molecular-weight linear polymer backbone with very low sulfate substitution, yielding superior gel strength and biological inertness with minimal chemical modification; it is the gold standard for bacteriological and pharmaceutical applications. Conversely, Gracilaria-sourced agar naturally contains a higher ratio of agaropectin and sulfate groups. It requires intensive industrial alkali treatment (alkaline hydrolysis) to eliminate sulfate groups and boost gel strength, making it highly cost-effective and widely used in large-scale food-grade applications like confectionery and dairy.
