What is KELCOGEL LT100 and what are its applications?

KELCOGEL LT100 is a typical high acyl gellan gum product developed by CP Kelco (now part of Tate & Lyle). It is mainly used in food and personal care systems for structure formation and suspension stabilization.

It is produced by microbial fermentation (Sphingomonas).
Type: High acyl gellan gum (E418)

Fundamentally, it is a gellan gum modified with acetyl and glyceryl groups, which form a soft and elastic three-dimensional network structure.

Structural Properties

Gel type: soft, elastic, and non-brittle
Can form fluid gels

Unlike low acyl gellan gum, it does not form a rigid gel but rather a soft structural system


The difference between low acyl and high acyl structure, the right side is high acyl gellan gum molecular structure which forms elastic and soft gel. 


Major Advantage: Suspension Performance
It can effectively stabilize the suspension of:

Fruit particles
Cocoa particles
Protein particles

Prevents sedimentation and phase separation (core functionality)

Rheology and Mouthfeel
Exhibits shear-thinning behavior (easy to pump and drink)

Provides a smooth, non-sticky, non-gummy mouthfeel



Processing Characteristics

Hydration temperature: 70–80°C
Thermoreversible behavior
Suitable for acidic systems (e.g., acidified dairy beverages)

III. Typical Applications

LT100 is not primarily used as a strong gelling agent, but rather as a structuring system:

Fruit or cocoa suspension beverages
Acidified dairy beverages
Drinkable jelly products
Jams and sauces

IV. Typical Usage Levels

Based on industry practice:

Beverages: 0.02% – 0.2%
Gel-type products: 0.1% – 0.5%
