How to use agar to make Cold sauce with green cardamom?

1000 mL water

50 g glucose

12 capsules of cardamom

3-4 cm fresh ginger, peeled and minced zest of 1 lime


For thickening use one of the following

g agar (0.38%)

20 g pectin (1.9%)

10 g gelatin (1.0%)

Bring water and glucose to boil and infuse cardamom, ginger for 20 min. Add desired thickening agent and stir until dissolved (if using agar or pectin, mix with 10 g sugar to aid dispersion). Strain and serve.
