How to prevent my low acyl gellan gum gel from weeping (syneresis)?

To prevent syneresis (weeping) in low-acyl gellan gum gels, it is a standard industry practice to incorporate non-gelling hydrocolloids (thickeners). According to application studies, adding small amounts of Xanthan Gum, Carboxymethyl Cellulose (CMC), or Locust Bean Gum can effectively inhibit water separation.

These hydrocolloids function as stabilizers within the gel matrix, improving freeze-thaw stability and reducing the tendency for the gel to expel water over time. Typically, a combination ratio of 0.05%–0.2% (based on total formulation) is sufficient to achieve the desired anti-syneresis effect without significantly compromising the gel’s clarity or hardness.
