How to make plant-based soft candy using carrageenan (without gelatin)?

CAGCAR® SC-01 (Replace Gelatin)

CAGCAR SC-01 is a kind of gelatin-free soft candy powder made from seaweed colloid – Carrageenan. The gummy candy produced is very chewy with a firm texture. It features fast sugar boiling speed and fast demolding.

Process:

  1. Weighing: Weigh out CAGCAR SC-01 and mix it with a small amount of white sugar. While stirring, add it to the weighed water for swelling, for approximately half an hour.

  2. Boiling: Add the remaining white sugar, sodium citrate, and glucose syrup to a double boiler or candy cooking pot. Heat to about 90°C, then add the pre‑swollen CAGCAR SC‑01 mixture mentioned above. Continue boiling until it reaches approximately 105–110°C, observing the solids content until it is about 75%.

  3. Flavoring: Maintain temperature. Add flavor, color, and citric acid as needed while stirring, and mix uniformly.

  4. Casting: Cast the mixture into molds while hot. Demold after solidification.

  5. Drying: Initial temperature 45–48°C, controlled for 8 hours; adjust to 53–55°C for 24 hours; towards the end, just before removal from the drying room, adjust to 55–58°C and dry for 4–6 hours (or dry at the actual drying room temperature without exceeding 60°C until the desired solids content is achieved).

  6. Finished Product Packaging.
