How does the mesh size of Agar-Agar powder impact its dispersion and industrial processing?

Mesh size directly controls the rate of dispersion and hydration; finer particles disperse faster but are more prone to clumping if not handled correctly.

  • 40-60 Mesh Powder: The international standard for industrial food production. It pours easily and flows well in dry-blending systems, but requires turbulent agitation and slower addition to avoid forming "fish-eyes" (powder lumps with a dry core).

  • 100-120 Mesh Powder (Fine): Ideal for instant or automated continuous manufacturing lines. It achieves extremely rapid dispersion and faster dissolution rates at high temperatures, but must be pre-blended with other dry ingredients (like sugar) to ensure separated wetting.
