Because it is produced via the fermentation of a natural carbohydrate source (Sphingomonas elodea), it is inherently vegan, vegetarian, Kosher, and Halal certified. Industrially, Low Acyl (LA) Gellan Gum mimics the high clarity and firm snap of gelatin in products like vegan gummy candies and water jellies, but with two major advantages: it has a much higher melting point (remaining stable at room temperature in hot climates) and requires less than 1/10th of the dosage compared to gelatin to achieve similar gel strength.
