Agar is highly susceptible to acid hydrolysis at high temperatures. If agar is boiled in a solution with a pH below 5.5, its polysaccharide chains break down rapidly, causing a catastrophic loss of gel strength. However, if the acid is injected after boiling and during the cooling phase, the gel will set normally and remain completely stable under acidic room-temperature conditions.
